4 tbsp. flour
1 tsp. dry mustard
3/4 tsp. cumin
jalapeno relish (as much as you prefer - Mimi used 1/2 of a 7.5 oz. can)
2 cups milk
1 lb. velveeta cheese

Mix all ingredients together and heat until melted.
