1 stick unsalted butter, softened
1/2 C. creamy peanut butter
3/4 C. packed light brown sugar
3/4 C. granulated sugar, plus 1/4 C. for rolling
2 tsp. vanilla
2 large eggs
2 C. flour
1/2 C. unsweetened cocoa powder
1/2 tsp. salt
48 dark or milk chocolate kisses, unwrapped

In a medium bowl, beat butter, peanut butter, light-brown sugar, 3/4 C. granulated sugar and vanilla until smooth and creamy. Beat in eggs, beating well to incorporate. In another bowl, combine flour, cocoa and salt. On low speed, beat into butter mixture. Refrigerate 15 minutes. Heat oven to 375. Roll dough into balls, 1 tablespoon each. Roll each ball into remaining granulated sugar. Transfer to ungreased baking sheets, spacing 1 inch apart. Bake in a 375 degree oven until set, 10 minutes. Press an unwrapped chocolate candy in center of each cookie. Return to oven and bake 1 minute to set. Let cool slightly. Remove cookies to a rack; let cool completely. Store cookies in an airtight container up to 2 weeks. Makes about 4 dozen.
