2 med. potatoes, peeled & diced
1/4 cup vegetable oil
1/2 cup green onions
1/4 cup minced parsley
1 garlic clove
6 eggs
1/4 cup water
1/2 tsp. salt
1/8 tsp. pepper
sour cream

Directions:
Directions:
In 12" skillet cook potatoes in oil over medium heat for 10 minutes or until golden brown. Add onions, parsley and garlic, until tender. In a bowl beat eggs, water, salt & pepper. Pour over potato mixture. Cover and Cook 8-10 minutes or until completely set. Cut in wedges, serve with sour cream.
