1 small white potato
2-3 lbs powdered sugar
1 tsp vanilla
1 jar creamy peanut butter

Directions:
Directions:
Boil golf ball sized potato to tender and cool. Peel and place in large mixing bowl, and mash. Add vanilla and mix well. Slowly add small amounts of powdered sugar mixing well. When it gets "watery" again, add more sugar. Mixture is ready when it ceases getting "watery" and forms a stiff dough, that is ready to spread out and roll. Roll into rectangle (1/8-1/4" thick) on flat surface dusted with powdered sugar. Spread with layer of peanut butter, 1/4" or so thick. Roll up like a jelly roll. Slice and serve.

If there is too much sugar in "dough" the candy will be dry. If the potato is too large, it will take tons of powdered sugar to get it to the dough stage. Dough should be quite stiff, bit not dry.
