1 1/2 c. flour 1 tsp. cinnamon 1/2 tsp. salt 1/4 tsp. baking powder 1 egg 1 c. sugar 1/4 c. oil 1 c. peeled & shredded zuccini 1/2 tsp. vanilla 1/4 tsp. lemon zest or lemon flavoring 1/2 c. nuts (optional)
Sift together flour, cinnamon, salt & b.p. In bowl, beat egg, sugar, oil and zuccini. Gently fold in dry ingredients. Add vanilla, lemon & nuts. Spread in large loaf pan or 2 small ones. Bake at 350 degrees for 50 minutes for large pan, less time for smaller pans.
