3/4 cup sliced natural almonds, lightly toasted (crush if desired)
1 whole chicken breast, skinned, boned, and cut in half
salt
pepper
2 tbs flour
1 egg, beaten with 1 tsp water
2 tbs butter, melted
1/2 lemon juice
3/4 tsp chopped fresh basil or 1/4 tsp dried basil


Directions:
Directions:
Season chicken with salt and pepper (or Tony's Cajun seasoning) and dredge with flour. Pat off excess flour. Dip chicken in beaten egg. Press each chicken breast in almonds, covering chicken well. Place on buttered baking sheet. Bake at 425 degrees F for 10-15 minutes or until chicken is just firm and almonds are golden. Meanwhile, combine butter, lemon juice, and basil. Drizzle over cooked chicken breasts.
