Ingredients: 1 3/4 cup flour 1 tsp. baking soda 1 tsp. salt 1/2 cup (1 stick) butter, softened 1/2 cup brown sugar 1/2 cup granulated sugar 1 egg 1 tsp. vanilla 1/2 cup creamy peanut butter Hershey Kisses, unwrapped (40-50) 2-3 tbsp. granulated sugar (for coating cookies before baking)

Directions:Preheat oven to 375º F. In medium bowl, stir together the flour, baking soda and salt. Using electric mixer, cream together butter, brown sugar and granulated sugar. Mix in egg to sugar and butter mixture. Then add peanut butter and vanilla until combined. Gradually mix in flour mixture until fully incorporated. Make small balls with the dough (approximately 1 tbsp. of dough for each cookie) and roll each ball in granulated sugar before placing on ungreased cookie sheet. Cookies should be spaced about 2 inches apart. Bake cookies for 11-13 minutes. Remove cookies from oven and gently press 1 unwrapped chocolate kiss into each cookie. Allow to cool, then move cookies to cooling rack to fully cool. Store in airtight container in single layer. |

Notes: These are best if the cookie is small and the kiss is just surrounded by a bit of the cookie. The chocolate kisses take a little bit of time to set up after melting in the warm cookies.
