½ cup plus 1/3 cup shortening
½ cup plus 1/3 cup Lard
1 3 ½ long Cinnamon Stick
1 ½ tablespoons Cinnamon
2 ½ cups Sugar
8 cups Water

Directions:
Mix 1 1/2 cups sugar and 1 1/2 tablespoons of cinnamon into bowl set aside.

Place 4 cups of water in a pot with the 3 ½ inch long cinnamon stick and boil till ½ cup to ¾ cup water remains. Remove cinnamon stick and reserve the cinnamon water. Repeat process with the remaining 4 cups water and the same cinnamon stick until ½ cup cinnamon water remains. Remove cinnamon stick and combine both cinnamon waters and add 1 cup sugar. Boil until sugar dissolves and water thickens until ¾ or 1 cup cinnamon/sugar water remains. Set aside.

Cut shortening and lard into the flour with knives until it resembles coarse meal. Add the cinnamon/sugar water a little at a time to the flour shortening/lard mixture. Using your hands to mix and form dough into ball. Separate dough into 4 balls. Using one ball at a time and covering the remaining balls of dough with plastic wrap, roll the dough to ¼ inch thick. Cut dough using small cookie cutters that are of easy shape, such as hearts, squares, diamonds and ovals. Bake for 10 minutes 350.

Remove from oven and using a spatula immediately put the cookies into the bowl with the cinnamon and sugar mixture covering cookies completely. Shaking off excess cinnamon/sugar mixture, place cookies on foil and allow the cookies to cool. Store cookies in airtight containers. This recipe can be doubled.

We got this every Christmas from my Grandmother in a coffee can all the way from Premont, Texas to Anchorage, Alaska. I won 3rd place at the Tulsa State Fair for best cookie.
