2 lbs. yellow butternut squash or 1 med. size squash, peeled & diced
1 diced medium onion
1 can cream of chicken soup
1 c. sour cream
1 c. or 1 large carrot, peeled & shredded
1 8 oz. pkg. seasoned stuffing mix - dry Stove Top
1/2 c. melted butter or oleo
Salt & Pepper to taste

Cook squash in salted water for 10 min. Drain well. Saute onion in butter. Add the rest of ingredients. Mix well. Put in butterd casserol. Bake at 350 degrees for 45 min. or longer.
