Pork baby back ribs
Seasoning/ rub for the meat*
BBQ sauce*
Beer and/or vegetable/beef stock
Fresh garlic
Honey
Salt and pepper
Carrots and Celery

*store bought or create your own.
Here's a sample rub:
2 1/2 T chili powder
2 T ground cumin
1 T ground coriander
slightly less than 1 T if using table or sea salt OR 1 T kosher salt
1 T paprika
1 T dark brown sugar
1/2 T freshly ground black pepper
1/4 tsp cayenne
1/2 tsp mustard
1/2 tsp garlic powder

Prepare the ribs first by pealing off the membranes on the underside of the ribs. If unable to peel this off, score the back with a sharp knife. this allows the flavours of the rub and braizing sauce to penetrate the meat.
With your favourite rub coat the ribs (the night before) with seasoning. Cover tightly with saran wrap and refrigerate until ready to cook.
Prepare pan by lining with carrots and celery to form a grid.
Make a braizing sauce. Sweet and savory are a nice combination using beer or beef stock as basis. ie honey and garlic worchester sauce etc. Be creative. Make sauce and bring to a boil.
Pour braising sauce into roasting pan. Lay ribs on top of the carrot and celery grid.
Cover pan with tinfoil and bake in 325 oven for 1 1/2 - 2 hours.
Uncover and drain the braising liguid. Coat ribs with BBQ sauce and return to 375 oven for another 1/2 - 1 hour.
