2 lbs. Yukon gold or Russet potatoes, peeled, cut into 1 inch pieces
1 1/3 c. evaporated skim milk
1 large clove garlic, pressed
1/4 c. prepared white horseradish
6 T. unsalted butter, cut into pieces

Directions:
Directions:
1. Cook potatoes in large pot of boiling salted water until tender, about 20 minutes. Drain. Return to pot.
2. Meanwhile, bring milk and garlic to boil in large saucepan. Add horseradish.
3. Mash potatoes until fairly smooth. Add milk mixture and mash until completely smooth. Add butter and stir until melted. Season with salt and pepper. Serves 6.

I use my Kitchen Aid mixture to make mashed potatoes - another tip from Steve - which makes it almost effortless. Always mash potatoes well before adding any liquids or butter. Otherwise you may never get all the lumps out! Divine with Smothered Chicken.
