1 opossum
6 lg. sweet potatoes
2 tbsp. salt
1 tsp. red pepper, crushed
water

Directions:
Directions:
Lightly grease potatoes. Bake at 350 for 90 min. Set aside. Clean and dress opossum (remove head). Cut in half. Place in a pressure cooker in 2 qts. water. Season the water with salt and red pepper. Pressure for 45 min. Remove opossum when done and skim off grease. Set grease aside. Place opossum in a baking dish. Bake until brown. Add potatoes around the baked opossum. Pour the skimmed grease over potatoes. Return to oven to warm
