2 racks of spare ribs that have been cut into single ribs and then chopped in half with a heavy cleaver (you can ask the butcher to do this for you if you want)
Kosher salt and cracked black pepper
Sauces of choice for the side

Directions:
Directions:
Preheat oven to 325 degrees.
Place the cut up ribs into a big baking dish and generously season them with salt and pepper. Toss to coat. Spread them out into one even layer if possible.
Cover the dish with tin foil and bake for 2 hours in the 325 oven. Remove the foil and turn heat up to 425. Spill out the rendered fat and put the ribs back in the oven for another 40 minutes or so turning them half way through the cooking time. Ribs are done when they are golden brown and the meat is tender and shrinking away from the bones.
Serve with sauces of choice such as Teriyaki Sauce, Buffalo Wing Sauce, All purpose Asian Dipping Sauce, Bourbon Barbeque Sauce, Ginger Scallion Sauce, or whatever you want.
