Cook first 4 ingredients together until onions are tender. Bake crisp buttered bread. When crisp top with mozzarella. Heat until cheese melts into bread. Cube cheese toast. Place in soup bowls. Break 2 slices of extra cheese over the toast. Pour Hot soup in bowls over toast. Sprinkl parmesan over top.
