1/2 cup butter or margarine, softened
1 1/2 cup packed brown sugar
2 large eggs
1 cup canned pumpkin
1 teaspoon vanilla extract
1 teaspoon grated lemon peel
1 teaspoon lemon juice
2 1/2 cup all-purpose flour
1 Tablespoon baking powder
1 teaspoon salt
1 1/2 teaspoon pumpkin pie spice
1/4 teaspoon ground ginger
1 cup coarsely chopped walnuts

Directions:
Directions:
Cream butter and sugar together until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla extract, lemon peel and juice. Mix well.

Add dry ingredients and spices; blend well. Stir in walnuts.

Drop by tablespoonful onto greased baking sheets 2" apart. Bake at 375º for 12-14 minutes.

For Halloween: spread butter cream frosting on cookies and make a "face" with walnut pieces and candy corn.
