2 to 3 lbs. baby back ribs
4 slices fresh ginger, minced
6 cloves garlic, minced
2 tsp salt
1 large egg, beaten with a dash of salt
1 tbsp tapioca starch, (I use cornstarch)
3 tbsp honey
½ cup water
¼ tsp sesame oil
2 tbsp soya sauce
1 tbsp roasted sesame seeds

Directions:

1. In a wok or pan, put ribs, ginger, salt, 1 clove garlic, minced and water to just sufficiently cover the ribs. Bring to a boil and simmer ribs for 30 minutes. Drain.

2. Dip ribs in egg, then in starch for coating. Deep fry in 400 F oil until crisp and light brown.

3. While waiting, use a saucepan to prepare the sauce. Use high heat and 1 tbsp. of peanut oil, put in 5 cloves of minced garlic to brown. Add honey, dash of salt, 1 tbsp. starch in 1/2 cup liquid, 1/4 tsp. sesame oil & 2 tbsp. soy sauce. Stir and cook until thickened.

4. Dip ribs in sauce and heap on a platter. Garnish with sesame seeds on top.
