• Red or Golden potatoes, one per person • Red wine vinegar • Dried oregano • Salt • Pepper
Peel and cube potatoes and drop into pot of salted boiling water, Cook until fork tender, Drain water but leave potatoes in the pan, Pour about 1 ½ tsp of red wine vinegar per potato into pan, Sprinkle crushed oregano on potatoes, salt and pepper to taste, gently toss with a wooden spoon and cover until ready to serve.
