Red or Golden potatoes, one per person
Red wine vinegar
Dried oregano
Salt
Pepper

Directions:
Directions:
Peel and cube potatoes and drop into pot of salted boiling water,
Cook until fork tender,
Drain water but leave potatoes in the pan,
Pour about 1 tsp of red wine vinegar per potato into pan,
Sprinkle crushed oregano on potatoes, salt and pepper to taste, gently toss with a wooden spoon and cover until ready to serve.

Serve warm, yummy.
