1 bag frozen petite peas
1/2 head lettuce chopped small
2 ribs celery, chopped
6 green onions with tops, sliced finely
1/2 C. sweet pickle relish
1 C. mayonnaise
1-1/2 C. cheddar cheese, dice
1/2# bacon, cooked and diced (optional)

Directions:

Mix everything except the lettuce and refrigerate for a couple hours. Add lettuce, mix well and serve promptly.

Mother used to make this using canned peas, no lettuce, bacon or celery. It was Dad's favorite. She liked to experiment, and thought this was an improvement on her original.
