1/2 c. butter
1/4 c. brown sugar
1 Egg separated
1 c. flour
Finely chopped walnuts.

Directions:
Directions:
Preheat oven to 300º . F.
Cream butter and sugar until light. Add egg yolk, Mix thoroughly then add flour.

Roll the dough into small balls, dip in egg white which has been slightly beaten and then in walnuts. Put on a baking sheet and press down the centre of each cookie.

Bake for 5 minutes, remove from oven and press down the centre again
Return to oven and bake another 10 to 15 minutes.

Remove from oven and while still warm fill the indent in each cookie with jam or jelly.

This cookie was a family favorite. Bubby would fill the centres with her homemade jam. Strawberry was the most popular.
