1/3 c Bisquick 2 c. grated zucchini 1/4 c. parmesan cheese 1/8 tsp. salt and pepper 2 Tbsp. butter 2 large eggs (beaten)
Mix bisquick, cheese, salt and pepper in a bowl. Stir in eggs until mixture just becomes moist. Fold in zucchini. Melt butter in a skillet over moderate heat. Use 2 Tbsp. of batter for each pancake. Fry 2 or 3 minutes on each side until brown. You can top with more cheese.
