2 lbs. yellow and/or green squash (sliced-6 cups)
1/4 c. chopped onion
1 can condensed cream of chicken soup
1 c. sour cream
1 c. shedded carrots
1 8 oz. pkg. herb-seasoned stuffing mix
1/2 c. butter or margarine (melted)

Directions:
Directions:
In saucepan cook sliced squash and chopped onion in boiling water for 5 minutes: Drain.
Combine soup and sour cream. Stir in shredded carrrots. Fold in drained squash and onions. Combine stuffing mix and butter or margarine. Spread half of the stuffing mix in bottom of 12x7 1/2x2 baking dish. Spoon vegetable mixture on top and sprinkle with remaining stuffing. Bake at 350 for 25-30 minutes
