2 cups confectioners’ sugar, sifted
2 tablespoons cocoa, sifted
1/4 teaspoon salt
1/3 cup all-purpose flour, sifted
3 egg whites
1 cup chopped pecans, toasted

Directions:
Directions:
Preheat the oven to 350° F. Line two baking sheets with parchment paper. Stir together the sugar, cocoa, salt and flour. Add the egg whites one at a time. Beat well, then stir in the pecans. The batter will be very thin.
Drop by tablespoonfuls onto the prepared baking sheets. Bake for 12 to 15 minutes, until the cookies have begun to brown on the bottom and appear “set.” Allow to sit for about 2 minutes undisturbed, then remove the cookies to wire racks to cool completely. Store in airtight containers.
