1 1/2 cup oatmeal
1 egg
2/3 cup sugar
1 teaspoon baking powder
1 tablespoon flour

Directions:
Melt butter and pour over oatmeal in bowl. Beat egg until light, then beat in sugar. Add baking powder and flour, blending well. Combine with oatmeal and butter mixture. Drop by teaspoonfuls onto a greased and floured cookie sheet at least 2-3 inches apart (they spread out a lot).

Bake in a 350º oven for 6-8 minutes, or until slightly brown around edges. Cool 1 minute before removing from pan. If you use the same cookie sheet over several times, you may have to re-grease and re-flour it after a couple of times.

Makes 2 1/2 dozen cookies

Personal Notes:
Personal Notes:
The cookies should turn out very thin and crispy.
