4 lbs. dried brown beans or red kidney beans
6 qts. cold water
1/2 c. (1 stick) butter or margarine
4 pieces whole stick cinnamon
1 bottle dark molasses
1 to 2 c. firmly packed dark brown sugar
8 tsp. salt
3/4 to 1 c. white vinegar
Cornstarch (optional)

Directions:
Directions:
Rinse and pick over the beans. Place in a 12- or 16 quart kettle. Add water; let soak overnight. Add butter and whole cinnamonsticks; bring to boiling; lower heat; cover. Simmer, stirring occasionally, 1-1/2 hours or until beans are almost tender.
Add molasses, brown sugar, salt and vinegar; continue cooking, stirring often and adjusting lid to partially cover kettle, 30 minutes longer or until beans are completely tender and sauce is brown and slightly thickened. If you wish, the sauce can be thickened with a little cornstarch mixed with cold water.
