1/2 lb bacon,coarsely chopped
2 cups white cornmeal
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 cups buttermilk
1 large egg

Directions:
Directions:
Heat oven to 400 degrees. Using a large skillet, cook bacon until brown and crisp. Drain on paper towel, reserving drippings
Using a cast iron skillet, brush with 2 tbsp bacon drippings. Place skillet in oven to heat.
In medium bowl, whisk together cornmeal, salt, baking soda & powder. Add buttermilk, egg, and 4 tbsp. reserved drippings. Whisk until blended. Add bacon. Pur into hot skillet. Bake until firm to touch and golden brown - about 20 min. Invert on a wire rack to cool
