PINEAPPLE CUSTARD:
1/3 C. sugar
3 T. cornstarch
2 C. half-and-half
1 can crushed pineapple in juice
3 T. dark rum
TRIFLE:
2 C. heavy cream
2 t. sugar
1 baked angel food cake (14 oz.) cut into 1" cubes
1 can (15 oz.) mandarin oranges, drained with 6T. liquid reserved, and 3 orange sections reserved
1-3/4 C. toasted coconut

CUSTARD:
Put sugar and cornstarch in saucepan. Gradually stir in the half-and-half until well blended. Heat, stirring constantly, until mixture thickens. Boil for one minute, stirring constantly. Remove from heat and stir in the pineapple undrained and the rum. Spoon into a bowl and let stand until cooled to room temperature, stirring occasionally.
TRIFLE:
Beat the cream and sugar together at high speed until stiff peaks form. Use a 14-16-cup glass trifle bowl and layer one-third of the cake cubes, followed by one-third of the custard. Sprinkle with one-third of the reserved mandarin orange juice. Then layer on one-third of the orange segments, one-third of the whipped cream and 1/2 C. of the toasted coconut. repeat layering 2 more times: cake cubes, custard, orange juice, orange segments, whipped cream and coconut.
For a garnish, sprinkle the remaining toasted coconut and the reserved orange segments over the top of the trifle. Cover and refrigerate for at least 2 hours.
To make toasted coconut, spread it evenly on a baking sheet and bake at 350 degrees until lightly browned, 13-15 minutes. Cool.
