1 lb. shrimp, peeled and deveined
¾ c. scallions cut into 1” pieces
1 T. garlic, minced
1 T. fresh ginger, minced
2 ripe plums, sliced
1 dried red chili or crushed red pepper flakes
2 T. peanut oil

Sauce:
2 T. dry sherry
2 T. brown sugar
2 T. ketchup
2 T. low-sodium soy sauce
2 T. fresh lime juice
2 t. dark sesame oil
2 t. cornstarch

Directions:

1. Combine sauce ingredients in small bowl and set aside.
2. Heat oil in large sauté pan or wok. Stir fry crumbled chili for 30 seconds and add garlic and ginger. Cook and stir constantly another 30 seconds.
3. Add shrimp and stir fry until opaque, about 2 to 3 minutes.
4. Add sauce mixture, scallions and plums. Simmer until liquid thickens, about 2 to 3 minutes. Makes about 4 cups.

Serve with steamed rice or cellophane noodles. This is a quick, colorful week day meal that lets you take advantage of the short season for plums. Other times of the year, I have made this with fresh pineapple and it is very tasty.
