1/2 cup brewed coffee (double strength; strong leftover)
2-1/2 cups sifted flour
1/2 tsp. ginger
1/2 tsp. salt
1/2 cup shortening
1/2 cup sugar
1 beaten egg
2/3 cup molasses
1/2 tsp. baking soda
1/2 tsp. vanilla

Directions:
Directions:
Sift flour, salt and ginger; set aside. Cream the shortening, sugar, beaten egg and molasses. Dissolve the baking soda in the coffee and add to the sugar ingredients. Add the vanilla, then the dry ingredients. Drop on greased cookie sheets and bake at 375 degrees for 10-12 minutes
