1 1/2 C. Sugar
1/2 C. Flour
2 Lemons
2 C Boiling Water
8 Egg yolks/whites
1/3 C. Lemon Juice
2 Deep Crusted Pie Shells

Directions:
Directions:
Combine 1 1/2 cup of Sugar and 1/2 cup of self rising flour. Grate 2 lemons and add to this mixture. Add 2 cups of boiling water to this mixture. Cook until thick and clear on the stove for 5 minutes or in microwave for 3 minutes.
Add slightly 8 egg yolks. (Beat all 8 egg yolks together and slowly add to mixture.)
Add 1/3 cup of lemon juice.
While doing this bake 2 deep dish pie shells according to their directions.
Then cook this mixture an "additional" 5 min on stove or 3 min. in the microwave.
Beat 8 egg whites and add 3/4 cup of sugar gradually as the whites become slightly stiff. Continue beating until stiff.
Fold half of the egg whites into the cooked mixture. Then pour into two pie shells. Cover with remaining meringue. Bake for 10 min. at 325 or until Golden Brown.
