3 cups sugar
1 cup water
1 teaspoon cream of tartar
1/4 cup vinegar
1/2 teaspoon salt
butter the size of an egg
1 teaspoon vanilla or lemon juice

Directions:
Directions:
Mix sugar, water, cream of tartar, and vinegar well. Cover and let soak until sugar dissolves. Take lid off and add butter. Do not stir. Cook, test often in cold water for hard boil or until it threads. Pour into platter until cool enough to handle with buttered hands. Pull and fold back on it until it is snow white. Pour vanilla or lemon juice while pulling to flavor.
