1-1/2 c. sugar
1 c. Crisco
1-1/2 c. mashed sweet potatoes
1 c. pecans
2 c. self-rising flour
2 tsp. vanilla
2 egg whites
1 T. maple syrup
1 tsp. cinnamon

Directions:
Directions:
Preheat oven to 350 degrees. Grease and flour a 5" X 9" loaf pan. Cream sugar and shortening. Add egg whites and mix well. Stir in potatoes. Add remaining ingredients and thoroughly mix. Bake about 1 hour or until done. Partially cool in pan. Place on cake rack top side up and finish cooling.
