1 c. butter
1 1/2 c. brown sugar
2 eggs
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. rhubarb, diced
3/4 c. flaked coconut


Frosting:
3 oz. cream cheese, softened
1 T. butter, softened
3 tsp. vanilla
1 1/2 c. powdered sugar

Directions:
Directions:
In a large bowl, cream butter and sugar. Beat in eggs. Add flour, baking soda, and salt. Stir in rhubarb and coconut. Drop by teaspoons on cookie sheet. Bake at 350º for 10-15 minutes.
Mix frosting ingredients together and spread onto baked cookies.
