6 shoulder chops, 1" thick
5 Pippen apples, cored, sliced or chunked
2 medium onions, coarsely chopped
3 ribs celery, coarsely chopped
1-1/2 tsp. grated lemon rind
1 tsp. salt
1-1/2 tsp. sage
1-1/2 T. lemon juice
1/4 tsp. pepper

Directions:
Directions:
Trim excess fat from chops and brown on both sides in a large, heavy skillet. Drain off fat.
Combine remaining ingredients and spoon over chops. Cover with lid or foil and bake at 350 degrees about 50 minutes.
