6 lbs. pork baby back ribs

BARBECUE SAUCE
3 cups ketchup
2 bottles (11.2 oz each) Guiness beer
2 cups barbecue sauce (I usually use Sweet Baby Rays)
2/3 cup honey
1 small onion chopped
1/4 cup Worcestershire Sauce
2 Tbsp. Dijon mustard
2 Tbsp. chopped chipotle peppers in adobo sauce
4 tsp. ground chipotle pepper
1 tsp. salt
1 tsp garlic powder
1/2 tsp pepper

Directions:

1. Wrap ribs in large pieces ofheavy-duty foil and seal the edges. Bake or grill for 1 to 11/2 hours until tender. I usually bake them in the oven at 275 to 300 until tender.

2. In a large saucepan, combine sauce ingredients and bring to a boil. Reduce heat and simmer uncovered for about 45 minutes or until thickened, stirring occasionally.

3. Carefully remove ribs from foil. Put them in a large shallow baking pan and coat with half of the sauce. Bake for 30 to 40 minutes at 325 degrees or you can put them on the grill. I have done it both ways. Turn them about half way through the cooking time and coat with the remaining sauce.

4. You may need to vary your cooking times a little.

5. No matter when I've done them, they always turn out. :)
