2 to 3 cups crumbled unfrosted spice cake, muffins or gingerbread, divided
1 can (15 oz.) solid-pack pumpkin
2 1/2 cups cold milk
4 packages. (3.4 oz. each) instant butterscotch pudding mix
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
1/4 tsp. ground allspice
2 cups whipping cream
Maraschino cherries, option

Set aside 1/4 cup of cake crumbs for topping. Divide remaining crumbs into 4 portions; sprinkle one portion into a trifle bowl or 3 qt. serving bowl. In a large mixing bowl, combine pumpkin, milk, pudding mixes and spices; mix until smooth. Spoon half into the serving bowl. Sprinkle with a second portion of crumbs. Beat cream until stiff; spoon half into bowl. Sprinkle with a third portion of crumbs. Top with the remaining pumpkin mixture, the last portion of crumbs and remaining whipped cream. Sprinkle with the reserved crumbs. Cover and chill at least 2 hours before serving. Garnish with cherries if desired.
