"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
3 cups flour (don't sift)
1 1/3 cups shortening (I always use butter flavor shortening)
1 egg
6 Tbsp cold water
1 Tbsp vinegar
1 tsp salt

Directions:
Directions:
Cut the shortening into the flour and salt. Beat the egg into a cup, then add water and vinegar. Using your hands blend all the ingredients together. This only needs to be blended together with as little mixing as you need.
Tip: If you break the egg into the cup that you will be using to measure the shortening first, the shortening will come out clean. This should make at least 2 double crusted pies or more. Bake at 375º until golden brown.
