1 c. butter, softened
1 1/2 c. granulated sugar
1/2 c. firmly packed light brown sugar
1 T. vanilla extract
2 large eggs
3 1/2 c. all purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 c. dried cranberries, finely chopped
2 T. fresh rosemary, finely minced
2 T. orange zest (fresh is best)

Beat first four ingredients with electric mixer at medium speed until fluffy. Add eggs one at a time, beating until just blended after each. Stir together flour, salt and baking soda. Gradually add to butter mixture, beating until just blended after each addition. Stir in cranberries, rosemary and orange zest until well mixed.

Shape dough into four logs, approximately two inches in diameter and wrap each in plastic wrap. Refrigerate at least eight hours or up to three days.

Preheat oven to 350º. Cut logs into 1/4" slices and place on parchment paper-lined cookie sheet. Bake 12 minutes for a crispy cookie, or 8 minutes for a chewier cookie. Cool on wire rack.
