1 c. Oil
1 1/2 c. sugar
2 eggs
1 tsp. soda
1 c. buttermilk
3 1/2 c. sifted flour
1 tsp. baking powder
1 tsp. vanilla
1 tsp. salt

Directions:
Directions:
Cream the oil, sugar adn eggs on medium speed for 15 minutes. (this is the secret, must be for 15 minutes) During the 15 minutes of mixing, put soda in buttermilk and mix well. Sift flour, baking powder and salt. Turn mixer back to blending and alternate adding buttermilk and flour mixture. Add vanilla. Also can add 1/2 c. chopped nuts if desired. Put in refriderator overnight. Drop by heaping tablespoon onto greased cookie sheet. Bake at 400º for 8 - 9 minutes. Frost when cool.

Frosting:
1/4 c. margarine (melted)
2 c. powdered sugar
1 tsp. vanilla
2 - 3 Tbsp. evaporated milk

Beat together at high speed
