1 medium cook potato
1 1/2 lb. confectionery sugar
1/2 c. peanut butter
Directions:
Directions:
Cool potato & mix enough sugar to make a dough. Flour board with additional confectionery sugar, knead until stiff, then roll out. Spread with peanut butter & roll into long, tight roll. Cover with wax paper & place in refrigerator until firm. Remove from fridge, unroll paper & slice into pinwheels. Delicious.
