4 - 5 catfish fillets
1 1/2 cups finely ground white corn meal
1/2 cup all purpose flour
2 teaspoons salt
1 teaspoon ground black pepper
1 dash cayenne pepper to taste
3 eggs, beaten
1 cup buttermilk
Peanut oil for frying, enough to completely submerge fish

Heat oil to 375º
Rinse catfish fillets and place on paper towel to drain
Place corn meal, flour, salt, pepper and cayenne in a large brown
grocery sack.
Place eggs and buttermilk in a bowl and mix well.
Soak catfish fillets in buttermilk/egg mixture for about 5 - 10 minutes.
Remove about 4 or 5 fillets, shaking off excess liquid and put into
grocery sack.
Shake catfish until completely covered in corn meal mixture.
Remove from sack, and fry fish in the hot oil until golden brown.
Season with salt as needed and serve up hot!

Every time Grandma and Zip came to visit us in Alabama, they'd always want to have a fish fry. We have a catfish pond in our back yard, so the fish were always fresh! Grandma liked to have beer battered onion rings to go with the fish! The onion rings were her recipe! Very good! A recipe just like Grandma's is on page 14.
