6 beef chuck short ribs (4-5 lbs total)
2 cans (12 oz each) beer
1 c ketchup
1/3 c lemon juice
1/4 c packed light brown sugar
1/4 c vinegar
3 tbsp unsalted butter
1 tbsp Worcestershire sauce
1 tbsp yellow mustard
1 tsp onion powder
1/2 tsp celery seeds
1/2 tsp hot pepper sauce

Trim any excess fat from ribs. Place ribs in flameproof casserole dish, add beer, cover. Bring to a boil over high heat, reduce heat to low, simmer, covered about 1 1/2 hours or until fork tender. For sauce, in medium sized saucepan, stir together ketchup, lemon juice, brown sugar, vinegar, butter, Worcestershire, mustard, onion power, celery seeds and hot pepper sauce. Simmer over medium heat for 15 min. Cool and divide, using half of basting and half for dipping. Heat broiler. Brush ribs with sauce. Place on greased broiler-pan rack. Broil 8 minutes, turn ribs over, brush with more sauce, broil another 7 minutes or until crisp. In small saucepan, heat the reserved half of sauce for dipping.
