1 medium onion, chopped
1 T. olive oil
2 C. dried lentils
2# sweet potatoes, peeled and diced (1/2" or less)
2 tsp. cumin
1 T. curry powder
1 tsp. salt
1/2 tsp. pepper
1-11/2 qts. chicken broth

Directions:
Directions:
Saute onion and garlic in oil in large Dutch oven until onion is limp.
Wash and drain lentils and add them and all remaiing ingredients to the onions. Bring to a boil, reduce heat, cover and simmer until potatoes and lentils are tender, about 30 minutes.

My sister, Marian, loved to use sweet potatoes. Mother liked to experiment and introduced us to curry which she often added to tuna salad. Our family liked lentils, so this recipe evolved one year after she had visited Marian and then came to spend the winter with us.
