5 lb. country style boneless pork ribs
salt
olive oil
2 slices bacon or 1/2 tsp. liquid smoke
2 Tbs. dried thyme
1/2 onion, diced
3 grated garlic cloves
2 c. ketchup
1 c. peach preserves
2 Tbs. Dijon mustard
2 Tbs. brown sugar
1 tsp. ground cumin
1 tsp. paprika

Heat oven to 250.
Place ribs in a baking pan (be sure it is deep enough to hold drippings and sauce) sprinkle with salt and drizzle with oil, bake for 1 1/2 hrs.
Meanwhile, make the sauce.
In a large pot brown the bacon in olive oil (or just put the liquid smoke in with oil) and add the thyme. Add onion and do over low heat. add the remainder of the ingredients cook for 20 min. slowly. Let set.
Baste the ribs with this sauce and continue to bake ribs for several more hours. You can baste every 30 min. or just pour remaining sauce over and let them hang out in the oven till very tender.
