4 C. cubed, unpeeled zucchini
1 C. mayonnaise (not diet)
1 C. grated Parmesan cheese
1/2 C. chopped onion
1/2 C. chopped red or green peppers

Directions:
Directions:
Simmer zucchini in water to cover for 10 minutes. Drain well.
Mix the zucchini with remaining ingredients. Transfer to a greased 1-1/2 qt. casserole and bake 30-35 minutes at 350 degrees or until it is golden brown and puffy.
