1 8-oz. can pineapple chunks, drained, save juice.
2 C. shredded cabbage
1/2 C. chopped apple
1/2 C. shredded carrots
1/4 C. chopped green and/or red peppers
DRESSING:
1 T. olive oil
1 T. honey
1 T. lemon juice
1/8 tsp. ginger
2 T. pineapple juice

Directions:
Directions:
Mix salad ingredients in large bowl.
Mix dressing ingredients and pour over vegetables, mixing thoroughly.
Serve.
