2 lbs. chicken or steak, in 1-inch cubes
Marinade:
1/4 c. oil
1/2 c. soy sauce
1/8 c. vinegar or lemon juice
1/2 - 1 clove garlic, grated
1/2 - 3/4 tsp. fresh ginger root, grated
1 T. honey or maple syrup
Suggested vegetable items for kabobs:
zucchini, red or sweet onion, red potatoes, mushrooms, red or green peppers, cherry tomatoes

Directions:
Directions:
Whisk together marinade ingredients and pour over the cubed raw chicken breast or steak (approximately 1 inch in size). Marinade in refrigerator at least 2 hours. Place on metal skewers or soaked bamboo skewers alternating with desired vegetable chunks and small red potatoes that have been boiled just until tender (can also marinade potatoes ahead of time, separate from chicken). Grill kabobs until meat is tender and cooked through.
