DRESSING:
2 tbsps. minced onion.
1 c. vegetable oil.
1/2 c. white vinegar.
1 tsp. salt.
1/4 c. sugar.
1 tsp. Worcestershire sauce.
2 tbsps. ketchup.

SALAD:
1 lb. spinach, washed and well dried.
1 c. bite-sized pieces of iceberg lettuce.
1 grated carrot.
4 chopped eggs.
1/2 lb. bacon, cooked and crumbled.

Directions:
Directions:
Mix all dressing ingredients. When sugar has dissolved, refrigerate for at least one hour, preferably overnight.

To assemble, place spinach and lettuce in a bowl, add dressing and toss well. Sprinkle grated carrot, chopped eggs and crumbled bacon on top of salad. (If served in individual bowls. sprinkle carrot, eggs and bacon on top of each individual salad serving.)

This delicious salad dressing, perfected by my friend Georgia McGoldrick, can be stored for many weeks in a glass jar and used in the same manner as any bottled salad dressing.
