8 oranges with thick skins.
3 eggs, separated into yolks and whites.
1 1/4 c. sifted confectioners' sugar.
2 tbsps. cornstarch.
1 tbsp. Grand Marnier, Cointreau or Triple Sec.

If necessary, cut a thin slice off the bottom of each orange to assure it sits flat -- do NOT cut through skin. Cut a wide slice off the top of each orange. Scrape out the flesh and juice of the oranges -- use a grapefruit spoon and do NOT cut through skin.. Reserve the contents of six oranges. Preheat oven to 450 F. Place orange shells in baking dish. Extract juice from the reserved contents of six oranges by using a juicer or a fine mesh strainer -- push vigorously with a wooden spoon until all juice has been extracted. Discard pulp. In a saucepan, blend together egg yolks, sugar and cornstarch until a whitish color. Add orange juice and blend well. Heat over low heat, stirring constantly. At the first sign of boiling, remove from heat, add liqueur and cool. Beat egg whites to stiff peaks and fold into cooled orange juice mixture. Immediately pour mixture into orange shells. Reduce oven to 400 F, and bake oranges for 30 minutes. Serve immediately.
