4 medium sweet potatoes, cut into large wedges
1 Tablespoon olive oil
1/4 tsp freshly ground black pepper(optional)
1/8 tsp sea salt
1/2 tsp paprika
2 cloves garlic, minced

Directions:
Directions:
Place potatoes in large bowl; add cold water to cover
Let stand for 15 minutes
Preheat oven to 425 degrees F
Spray a monstick baking sheet with vegetable cooking spray. Set aside
Drain potatoes in colander. Spread on a double layer of paper towels. Cover with a second layer of paper towels. Press down on the towels to dry potatoes.
Transfer potatoes to a clean large bowl. Sprinkle with oil, pepper, salt, paprika.
Arrange seasoned potatoes in a single layer on prepared baking sheet.
Bake 20 minutes. turn potatoes over with spatula, sprinkle with garlic. Bake until golden, about 20 minutes, turning baking sheet after 10 minutes for even browning.
Note: This makes good french fries with russet potatoes.
Sweet potatoes burn faster than regular potatoes so you may have to use 400 degrees oven and watch time
