1 Large egg
1 container (6 oz) lemon yogurt
1 tbsp apple sauce (I usually use chunky)
1 tbsp canola oil
1 cup Insta-bake (Hodgson Mills)
1 cup Bisquick (or you can use 2 cups of Bisquick if you can not find Insta-Bake)
1/4 Sugar
1/8 cup flaxseed meal (optional)
1/4 cup chopped walnuts (optional)
blueberries (fresh or frozen)

1. Crack an egg into a bowl.
2. Add the yogurt, apple sauce and canola oil.
3. Mix together.
4. Add the Insta-bake, Bisquick, sugar, flaxseed meal if desired, and walnuts and combine together.
5. Pour the batter using a spoon into individual muffin cups in a muffin tin.
6. Dot the muffins with blueberries. Usually about 5 to 6 blueberries per muffin.
7. Bake at 350º for about 25 to 30 minutes until brown on top and a toothpick inserted comes out clean.
